linguine alla carbonara di salsiccia

The other night we tried another recipe from Jamie Oliver’s cookbook Jamie Oliver; jamie’s italy. It was super yummy, and pretty quick to make.

You will need:

4 Italian sausages
olive oil
4 slices of thickly cut pancetta (which we didn’t have, so we just used regular bacon)
salt & pepper
1 lb dried linguine
4 large egg yolks
1/2 cup heavy cream
3 1/2 oz freshly grated Parmesan cheese
zest of 1 lemon
 
1. Cut the sausages lengthwise, and remove all the meat. Using your hands, roll little balls of sausage meat. Set aside.
2. Heat a frying pan and add a splash of olive oil. Fry the meatballs until golden all over, then add the pancetta.
3. While the meat is cooking, bring a pot of water to a boil, and cook the linguine according to the package instructions.
4. In a large bowl, mix together the egg yolks, cream, half of the cheese, and the lemon zest. 
5. Mix the drained pasta into the egg mixture. Add the meatballs and bacon. The heat from the meat and pasta will cook the eggs just enough to thicken, but not scramble.
6. The sauce should be smooth and silky. If it is too thick, the pasta will stick together. Add some of the pasta water, if need be, to thin it out.
7. Sprinkle the remaining cheese on top.

Badda boom! Easy peasy. Now you have tonight’s dinner all planned out 🙂
